Use & maintenance
Before first use, the pan must be seasoned to activate the non-stick properties:
- Rinse the pan with hot water (no soap) and dry thoroughly.
- Pour a thin layer of vegetable oil (e.g. sunflower) into the pan.
- Heat the pan until the oil starts to smoke.
- Remove from heat, let cool, drain oil and wipe clean.
- Heat the pan empty for another 2 minutes.
Be careful with acidic ingredients like tomatoes and lemon, as they can damage the patina. Afterward, it's important to re-season the pan with a little oil.
Cleaning:
- Clean only with hot water and a soft brush or sponge.
- Do not use dishwashing liquid.
- Do not soak, do not put in the dishwasher.
- Dry immediately after use and apply a thin layer of oil to prevent rust.
- For periodic cleaning: heat coarse salt in the pan, let cool, rinse and oil lightly.
Note: It's normal for the pan to darken. This is part of the natural seasoning process and improves performance with each use.
